The average American ate 16.3 pounds of fish and shellfish in 2007, a one percent decline from the 2006 consumption figures of 16.5 pounds, according to a NOAA’s Fisheries Service study.

Cod sales diving in United Kingdom

Even as consumers in the United Kingdom warm to new species of whitefish such as tilapia, sales of the standard bearer, cod, have fallen 12.3 percent in volume terms since last year. British consumers have bought 55,000 metric tons of cod in the year to June 14, down sharply from last year. Nevertheless, cod is the top consumed seafood in the United Kingdom in volume terms, ahead of salmon by more than 20,000 metric tons, according to data published by AC Nielsen/Seafish. Though cod stocks are recovering in some northern waters, overall production is down significantly as quotas have been slashed. The good news for the cod business is prices have surged as the markets get used to lower volumes, with the average price kilo up 8 percent compared to last year. Nevertheless, fattening prices were not enough to stop the overall value of U.K. cod sales from falling 5 percent to £360 million (€455 million/$719 million). The segment of cod slammed hardest is ready-meals, with sales off 29 percent since last year. Tumbling cod sales come at the same time as many species of whitefish are rising in Britain. During the same time period, sales of tilapia rose 55 percent, hoki 56 percent and pollock 144 percent. To an extent, their rapid rise has happened because retailers have started labeling products with the real species names for the first time. The highly diversified points of purchase for cod reflect the ultra-competitive nature of the U.K. retail industry. Retailer Tesco holds the thickest market share at 25 pecent. Tesco is followed by Sainsbury’s at 17.6 percent, Asda at 16.1 percent, Morrisons at 10.2 percent, Iceland at 7 percent, Marks & Spencer at 5.7 percent, Somerfield at 3.7 percent, Lidl at 3.2 percent, and Waitrose at 3 percent.

OCEANS: Runaway icebergs crush Antarctic sea bottom habitat

Icebergs are scouring the Antarctic seabed at a significantly higher rate as sea ice shrinks, according to a study released yesterday. These scours crush animals and plants that live up to 500 meters (about 1,640 feet) below surface waters, which could have devastating impacts for the 80 percent of Antarctic marine life that dwells on the seabed. While iceberg scours promote biodiversity by creating space for marine animals, researchers said too many of them could affect species distribution and alter the number of creatures living in the Antarctic waters. In the short term, the number of scours is expected to increase as global warming reduces the size and duration of winter sea ice, according to the study published in the journal Science. But over centuries, researchers predict that ice disturbances will be significantly reduced as glaciers retreat (Agence France-Presse, July 17).
 
 
FYI - Seafood Recipe
 
PAN-SEARED ALASKA SALMON WITH ORANGE VINAIGRETTE
  • 4 Alaska salmon fillets or steaks (6-8 oz. each), thawed if necessary
  • 1 cup orange juice
  • 1-1/2 tbsp. red onion, minced
  • 1-1/2 tbsp. lime juice
  • 1 tsp. Honey-Dijon mustard
  • 1 tsp. chili powder
  • 1/2 cup fat free Italian salad dressing
  • 4 tsp. fresh cilantro, chopped
  • 1 tbsp. olive oil
  • salt and pepper, to taste
  • Sauce
    Cook orange juice in a small saucepan over medium-high heat until it is reduced to the consistency of syrup (makes about 1/4 cup); let cool slightly. Place onion, lime juice, mustard and chili powder in a blender; add cooled syrup. Blend 30 seconds. Then, with blender running, slowly drizzle in the salad dressing so that the mixture emulsifies.

    Pan-Seared Salmon
    Preheat oven to 400°F. Lightly season the Alaska salmon fillets or steaks with salt and pepper. Heat and oven-proof saute pan 2 minutes, then add 1 tbsp. of olive oil. Sear the salmon fillets/steaks on one side for 2-3 minutes. Turn salmon fillets/steaks over and place the entire pan into the oven. Bake 4-8 minutes, or until fish flakes easily when tested with a fork. To serve, make a 1 oz. pool of the orange vinaigrette sauce in the center of 4 plates. Top with a salmon fillet/steak and garnish with 1 tsp. of chopped cilantro. Makes 4 servings.
